Though the recipe from Parents.com is already simple and fool-proof, I took even more shortcuts so I could hurry up and eat. I substituted frozen spinach, green beans, peas, and carrots for the fresh veggies, and just added a pinch of dried oregano, basil, sea salt, and black pepper. Since the veggies take a while to thaw, I brought the water/broth combo to a boil and then tossed the tortellini and veggies in to simmer together. Easy!
